Cork is not average; it's random: The Waters & Williams (AWRI) 1997 study suggested that there was a large variance of change over time in Total SO2 and browning (OD 420) in bottles of the same wine with cork closures. The importance of this study is that individual corks transmit variable amounts of oxygen into wine bottles. This supports the belief that there are no great vintages, just great bottles of wine because of the dramatic variation in oxygen rate per bottle. |
